3 zucchini, rinsed
1/4 cup Parmesan, shredded
1/2 cup bread crumbs
2 tsp garlic powder
1 tsp onion powder
1 tsp parsley
1 tsp black pepper
2 tsp paprika
2 egg whites

Preheat oven to 450 degrees.  Slice zucchini as thinly and uniformly as possible (I actually used our meat slicer!).  Lay on a paper towel and let excess moisture drain out for about 10 minutes.

Mix together all dry ingredients and cheese in one bowl.  In another bowl whisk egg whites until frothy.

Spray a cookie sheet with cooking spray.  Dip each zucchini in the egg whites then in the dry mixture.  Place on the cookie sheet and bake for 5 minutes.  Pull out the baking sheet, flip the zucchini over and bake for another 7 minutes.

Serve with ranch dressing – these are a fantastic snack!
